Spinach Chicken Lasagna Rolls

I love Pinterest.  Who doesn't?  We try 1 or 2 things a week that I find on it.  This just happens to be one of them.  Ooo it was good.  And a nice new recipe to throw into the mix.  I made some changes from the original recipe to fit our taste, and it turned out great!

Adapted from ivillage
Ingredients:
3 cups chopped cooked chicken
1 cup cooked or thawed frozen spinach1/4 cup milk
1 cup Ricotta cheese
1/8 teaspoon pepper
Salt to taste (I put in about 1/2 teaspoon)
1/2 cup Mozzarella
lasagna noodles, cooked and drained
1/4 cup grated Parmesan cheese
2 cups Prego Spaghetti Sauce

Directions:

1. In medium bowl, combine chicken, spinach, cheeses, milk, and pepper
2. Spread 1/2 cup mixture on each lasagna noodle; roll jelly-roll fashion
3. In a 13 by 9-inch baking dish, spread 1 cup spaghetti sauce
4. Arrange lasagna rolls, seam-side down in sauce in baking dish
5. Top with remaining spaghetti sauce (I also added more Mozzarella and Parmesan cheese to the top)
6. Cover, Bake at 375 degrees F for 30 minutes or until hot
Serve, if desired, with additional Parmesan cheese.
