Sugar Cookies

We made these for Valentine's Day and savored them for a few days before they disappeared   This is the sugar cookie recipe my Mom always used growing up, but we changed the icing.  It is more of a glaze.  Super Yummy!






Cookies:

Ingredients:
(I usually cut in half-unless you are baking for others.  For just our family, we do a half batch-there are 4 of us)
2 ¼ cups butter-softened                                            
3 cups sugar
6 eggs                                                               
3 tsp. vanilla
7 ½ cups flour                                                
3 tsp. salt
3 tsp. baking powder

Directions:
1.  Mix together butter and sugar.  
2. Add eggs.  Beat well.  
3. Add remaining ingredients-mix.  
4. Chill in freezer fro 1 hour or up to 3 months. (Divide into 3 balls and wrap in plastic wrap) 
5. Roll out 1/8 - 1/4 inches thick and use cookie cutters. 
6. Bake at 400 for 6-8 Minutes.  Cool.  Then frost.

Icing:

Ingredients:
1 Cup Powdered Sugar
2 tsp Milk
2 tsp Light Corn syrup
1/3 tsp Almond Extract
( I doubled this recipe for my half batch of cookies)

Directions:
1. In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
2. Divide into separate bowls, and add food colorings to each to desired intensity. Dip cookies, or paint them with a brush-or knife.
