We call these potatoes "Hulk Potatoes" because my 3 year old son does NOT like Broccoli, but he loves "Hulk Potatoes"! These are nice break from the white mashed potato monotony. The broccoli gives it a nice subtle flavor, and the cheese makes it, well, cheesy!
Ingredients:
5-6 Potatoes
1 bag Frozen Broccoli Florets, or 1 head of Broccoli chopped
1 cup Cheddar Cheese
1 tsp. Salt
1/2 tp Pepper
1/2 stick (4 tbsp) Butter
1/4-1/2 c Milk
Directions:
1. Peel, cut, and boil potatoes for 25 min or until tender.
2. Cook Broccoli till soft.
3. Using a potato masher, or food processor, or immersion blender (depending on what you have), break up and squash/puree cooked broccoli.
4. Throw potatoes, salt, pepper, butter, and milk into a Kitchen Aid or Bosch Mixer. Turn on and mix until mashed potato consistency. Add more milk if needed.
5. Add Broccoli and Cheese. Mix until all combined. Taste, add more salt if needed. Serve hot/warm!
