When I first put this chicken together, I was nervous. It calls for some Italian dressing and some ranch seasoning. I was nervous that it would taste too much like dressing. I was wrong. Incredibly wrong. This chicken is my new favorite chicken. It is so versatile too. Throw it in a casserole, in burritos, or have it in a salad like I did. Really good. I also paired mine with Cilantro lime rice. Oooo I love that stuff. I am a big cilantro, and lime fan, so it was a hit with me!!!!

Chicken
Ingredients:
2 lbs chicken breasts
1/2 a small bottle of zesty italian dressing
1/2 Tbsp. minced garlic
1 pkt ranch dressing mix (mixed with 1/2 cup of water)
1/2 Tbsp. chili powder
1/2 Tbsp. ground cumin
Directions:
1. Place all ingredients in a crock pot.
2. Cook on High 5-6 hours OR on Low 8 hours.
3. Shred with fork (or with beaters/Bosch/or in a Kitchen Aid) and serve in salads, burritos, tacos…etc.
Rice (found on Fav Family Recipes)
Ingredients:
1 c. uncooked rice (long-grain, white rice)
1 tsp. butter or margarine
2 cloves garlic, minced
1 tsp. freshly squeezed lime juice
1 can (15 oz) chicken broth
1 cup water
1 Tbsp. freshly squeezed lime juice
2 tsp. sugar
3 tablespoons fresh chopped cilantro
Directions:
1. In a saucepan combine rice, butter, garlic, 1 tsp. lime, chicken broth and water.
2. Bring to a boil. Cover and cook on low 15-20 minutes, until rice is tender.
3. Remove from heat. In a small bowl combine lime juice, sugar and cilantro.
4. Pour over hot cooked rice and mix in as you fluff the rice.
